Mmm Mmm Mmm
I did this a while back when I was having a pizza craving but really wanted to find a fun alternative to it (though Jeff made a super yummy whole wheat homemade pizza dough that was pretty good!) I also wanted to keep it simple because, well I like things that are easy! It was a hit, and I’ll definitely be doing it again.
Sweet Potato Pizza
As mentioned, super easy. Basically you’re going to need…
- What ever you’d like to top your pizza with (ie, pizza sauce, cheese, ground turkey, onions etc.)
- Sweet potatoes
- Extra virgin olive oil
- An oven
- A baking sheet
I made a home made pizza sauce (again posted on Instagram a while back, but let me know if you want a recipe post for it), cut up white onion, green onion, some aged gruyere cheese, and some crumbled ground turkey! You can see the rest of them were making regular pizza as I experimented with mine, pffft no faith.
I started by slicing my sweet potatos, drizzling them with a little evoo (just to cover), sprinkled a little salt and pepper and put them in the oven at 350 for about 20-30 minutes, turning over once about half way through (and testing firmness). I took them out when they were clearly cooked yet still slightly firm.
When I took them out of the oven I switched it over to broil and then I just added the toppings same as you would any other pizza!
Seeerrriiiously, should I do a pizza sauce post??
Popped’em back in the oven to broil for about 5-10 minutes, I just made sure to watch the cheese to make sure it was melted but not burnt… unless you like it burnt then have’ater
This was SO yummy, and SOOOO easy. I got so excited that this worked that my mind went into over drive thinking of all the sweet potato pizza possibilities! So please please doooooo this and then come back and let me know what you did so I can try it too!!
