Cranberry Coconut Granola

I’m doing it. I’m joining the ranks with the best of “them”, jumping on the train, claiming full crunchy-mom status, whatever the case, I am making my own granola!

I’ll throw this one in the pool of homemade granola recipes!

Like with most food-related things, the best thing about making something yourself is that you can decide exactly what goes into it and also like with most of MY foods/recipes I totally flew by the seat of my pants while making this. For the purposes of this post however I did write down exactly the measurements that I used, though typically I wouldn’t even use measurements as fly-by-the-seat-cooking usually requires a lot of eye-balling. I would encourage you all to try this recipe by eyeballing, the best way to learn how to randomly make delicious things is by practice, and this particular kind of recipe works so well for doing this. Skim through the “what you’ll need” list, toast up your oats, throw in what you like a little at a time, taste as you go, and adjust until you get it to where you want it!


Cranberry Coconut Granola

What you’ll need

  • 1 cup whole grain quick oats
  • 1 tsp honey
  • 1 tsp extra virgin olive oil
  • 1/2 cup roughly chopped almonds
  • 1/3 cup coconut flakes
  • 1/4 cup roughly chopped dried cranberries
  • 2 tsp ground cinnamon
  • 2 tbsp chia seeds

What to do

Pre-heat the oven to 350 and in a large bowl stir in oats, honey and olive oil until combined. Spread oat honey mixture on baked sheet and put in oven for 6 to 9 minutes, giving your oats a quick stir half way through (and watching so as to not let them burn!)


While you wait for your oats to cool slightly, roughly chop your almonds while watching other people make delicious food on YouTube. Then your cranberries. Then go ahead and throw your chopped almonds, cranberries, coconut flakes, cinnamon, and chia seeds back into your large bowl (same one as you used for your oats, we aren’t trying to create a sink full of dirty dishes). Add your oats and mix!


ok, I hadn’t actually added the cranberries at this point, but whatev.


That, is, all.


See how simple!? Add some chopped walnuts, buckwheat grouts, raisins, pumpkin seeds, sunflower seeds, seriously what ever you’d like.

Have it in a fruit “cereal” and chop up a bunch of apples, sprinkle it on and pour some unsweetened almond milk on top! Or add it to some vanilla coconut yogurt with some bananas! (obviously you go ahead and use whatever version of milk or yogurt you prefer!)


**Remember to taste as you go. I did make this to suit my tastes, and my coconut flakes are already sweetened with coconut sugar so I did not add a lot of honey to the oats, so if you want it more sweet add more honey!
